The third annual conference of the OSU Food Waste Collaborative will focus on current research projects and other initiatives aimed at reducing food waste in the academic environment. Our keynote speaker, Dr. Brenna Ellison from the University of Illinois will present her research on student food choices in university dining halls and how these choices evolve over time. Joining her on stage will be representatives from OSU focused on reducing and redirecting food waste at Ohio State. Our second plenary session will highlight ongoing research supported by the OSU Food Waste Collaborative on such topics as improvements in Ohio food donations laws, composting and consumer behavior, and the role of label phrasing on food discard decisions. After a networking lunch break, concurrent sessions include focused discussions on campus-based student clubs working on food recovery efforts, the SWACO food waste reduction plan, and an overview of current public/private partnerships that are successfully redirecting food. The day will conclude with an optional tour the Black Soldier Fly Installation at nearby Waterman Farm.
